12CornTortillasYou can use flow tortillas here but the flavour is not as good

Sour Creme
2Green Onions sliced

Instructions
Making The Mole Sauce
Get a pot large enough to contain the sauce about 2 quarts. Then add Olive oil to it and heat it up.
Saute the onions garlic and fresh peppers until onions are clear or slightly browned.
add all other spices and saute for a few minutes filling the air with that sweet smell of cooking spices.
add Tomato sauce, chicken broth. Bring to a biol and the lower heat to med low and simmer while you prepare the filling
Making the Enchilada Filling
Brown ground Beef. Once it is browned scoop out the meat into a bowl leaving behind the grease to fry the onions in.
Saute the onions, garlic and fresh peppers in the beef fat until onions are clear to brown.
Add back beef and chili powder and mix well. Turn off the heat for pan now.
Making the Enchiladas
Turn off heat on Mole Sauce. Get an 8x12 baking dish and add a small layer of Mole sauce to the bottom of it and spread out
Heat Oven to 350°f
You may need to warm your corn tortillas you can do this by placing on an ovenproof container and placing in over for a few minutes while it is heating up.
This step take a little practice. Scoop of a couple spoonfuls of meat into tortilla and add some cheese to it and then roll it up and place in baking dish.
Once you have baking dish full then pour out Mole Sauce on top of all of it and spread evenly. The add cheese to the top and place in oven for 30 min. Once done pull out and let it sit for about 5 to 10 min before serving. Top with sliced tomatoes, sour creme, hot sauce and green onions. Then enjoy

This is an enchilada recipe I have been working on for sometime now. The basics have always been there but I was stumped on the Mole Sauce to have something that was easy to make without allot of fuss and get a great flavour.
